I don't see how tedium makes for better game play. It would have been better just to introduce a food that makes you run faster. No need for food meters. A lot less development time that could have introduced something "fun".
Having to mine the materials you want to build with is tedious. Having to defend yourself from mobs when trying to build is tedious. Maybe he should scrap everything except creative mode?
Just because it's not optional doesn't mean it will affect you the same way in every difficulty. Health regenerates quickly on peaceful already, so the only effect of an empty hunger bar will likely be not being able to sprint. Since sprinting is a new feature, this seems fine to me.
