They're dungeon enemies. They serve the same purpose that Guardians and Shulkers do.

No. They can be put in chests and ender chests, but not into themselves.

It's a left-handed Vindicator. They still attack with their right hand though despite the axe being in their off hand.

Still no axe for me, hmm. The shield disabling issue has actually been around forever now, it was even broken when 1.9 released.

Comically, there's actually a bug right now where naturally spawned Vindicators don't hold axes. They must have forgotten to give natural spawned ones an axe in their equip slot.
So right now naturally spawned ones beat you down with their fist.

It's a melee mob so naturally bows will destroy them. Only advantage they have is their speed and when they come in numbers.

Latest snapshot actually made it so that the axe they hold is no longer cosmetic.
As a result, they hit you for 9.5 hearts on hard mode now. If you wear diamond armor, they'll easily kill you with 3 hits, and iron armor just doesn't do anything at all. They also disable your shield 100% of the time they hit.

My point was they're not a different mob. This is like saying each different colored horse or rabbit is a different mob. They have the same ID, and are all spawned by the same egg.

One is a dungeon and one is a town with friendly NPC's, of course they look different.
Regardless, both of them were made by the same person, and obviously Jeb's improved building skills and use of structure blocks will cause some differences compared to the NPC villages designed about 6 years ago.

Typing "Llama in desert" or "desert llama" into google images and picking the first picture doesn't really prove that Llamas are native to deserts.
If you do research you'll find llamas thrive in high elevation. They are not like camels despite being related.

I think you're confusing Llamas with camels. Llama live in mountainous areas typically, usually the Andes mountains. Spawning in Extreme Hills makes sense.

The villagers don't really count. They're the same mob but different data to determine their color or profession.

Mine work just fine. Just use the sword's sweep attack to kill them across a 3 space gap.

XP farms are fine, just don't cram the mobs in a 1x1 space.

Vexes barely land their attacks because they move too fast and do pitiful damage when they do hit you, so they're not really an issue. The difficulty of the mansion is a joke, it can easily be beaten with iron gear, just like about everything else in this game.

Considering you just walk up to the Evokers and smack them a few times with a sword and they die instantly, I would hardly call them even a mini-boss.
