You can make a 1.8 profile with Forge, but when you run any other mods, it crashes. I just tried it again.

Trying to run 1.8 with mods still crashes. I'm hoping they fix this soon.

When you installed Forge, did you make a test world first with the Forge Profile? This will create extra folders you'll need, including the mods folder.
Second, make sure the mods you want are the same version as MC and Forge. You mentioned your using 1.12.2, the mods you want also have to be for 1.12.2.
Third, make sure your using the Forge Profile when you hit the Play button. Forge is actually three mods once run, the three you listed.
You can also use a third party app like MultiMC or CurseForge to run modded MC. These apps make it easier to create Forge Profiles and install mods.

MC does come with its own version of Java (1.8_51).
Java itself is safe to install. I recommend also installing 64-bit version of Java if your OS is 64-bit.

If you installed JEI, that will show all the items you can craft from the mods installed.

Once you install a version of Forge, its always available on what ever launcher you use. You don't need to keep re-installing the same version, or even delete a version. When you create a Profile, you can select what ever version of Forge is available.
99% of mods run on Forge (or another API like Fabric). Forge was created so other mods could easily run on MC. It is possible to create a non-API mod (Optifine is the best example), but it is very difficult.
If you want to use a mod in MC, you'll need to install the appropriate API that the mod requires. There's really no way around this.
Using a third-party app like CurseForge or MultiMC makes it a lot easier to install Forge and mods to play modded MC. I recommend using one of these.

Its Quark. There is an option to show invalid squares, basically. Go into the mod's set up, click Client, go to page 2 and uncheck the show invalid slot (or something like that).
