These generators are only useful when the ground isn't accessible or in certain survival maps, such as SkyBlock. However huge generators aren't practical and smaller ones are better, with tutorials available on youtube.
Well also if you way to lazy to mine you can use TNT to blow it up and then collect or use it as a device to suffocate mob that come out of a mob spawned!
I am about 99% sure they knew lava + water = cobblestone.
If not it wouldn't exist in the code.
What I guess you meant is that they didn't code it specifically for the generator.
It got popular after Skyblock was created and only seen it use in very specific scenarios.

The size of a cobblestone generator is limited to the view distance. I built one for about 1000 blocks, the cobble was used to push a line of wool to a redstone 3d printer, like ink.
My sanity is slowly draining from these kinds of posts.
On topic: I don't think Mojang created the cobblestone generator (other than the infinite water/lava code), I think it was more of a community thing if I am not mistaken.
Cobblestone Generators are only useful I find when stone is not available which really only occurs in custom maps. I find it's better just to quarry for it, you have the chance of getting ores.
