Nope, passive mobs no longer despawn (with the exception of squid, I believe).
Feeding them wheat will actually get them in breeding mode now - have two passive mobs of the same type in the same vicinity, feed both of them wheat and shortly afterwards they'll produce a baby animal.
So it used to be that if you found a pig or some other friendly mob and you fenced it in, they would eventually despawn and they wouldn't be there any more.
Do animals still despawn? If you feed them wheat does it stop them from despawning?
