it's not really a goal or anything, nor is the fight anything special, i personally just do it for the exp/removing the dragon from the end to make gathering resources there easier

Do you plan to build it in order? By that I mean, route 1, 2, 3, 4, etc., or corner-corner? And which version of the map will you be using to re-create it?

Once you've finally finished this massive generator of everything generate-able, then what? Some friends of mine see this game as little more than building specific things and completing the Nether and the End(assuming their attention span last long enough to make it there). So, what is it that you plan to do once you have everything? When mining is no longer something you do?
I also must ask why you didn't just build it on the surface? Surely you're not going to be making buildings several hundred blocks tall?

as someone whose been here since "classic" was just called minecraft:
1. old world generation was good
a. i use to love the giant, steep mountains. when survival was introduced, that's where i often built my bases
b. i hated how, even if you found flat land, it was either very small or ugly and in the middle of a wasteland
c. everything was just one colour, and made it very boring
2. new world generation is also good
a. flat lands around water is a nice place to build a house
b. there's still ridiculous areas of the map that i can't find a flat area
c. shallow water is ugly

i haven't been on this forum for awhile, but i use to have a mod that vastly expanded the lakes, rivers, and oceans. coral on the sea floor, for example. it added ~50 different fish and completely changed fishing, in a good way.

i'm not sure about the 'never respawn' claim, but there's typically 2-8 mobs per spawn. simply kill all but 2.
wheat grows stupidly fast, actually. i'd like to see that rate reduced a bit. by the 3rd day in minecraft, you can typically have a never ending supply of bread.
if you fear the night, spend it gathering supplies; so, when morning comes around, you can go loot monsters that died nearby.
not at all. dig an 8x8x8 hole in the ground(or build one above ground, whatever you like), put a few torches around to keep mobs from spawning, and grow mushroom trees with bonemeal.
watermelons have the ability to grow within seconds of being planted.
cut down one tree, make a crafting bench, dig 12 pieces of cobble. make an axe, cut down a forest before night. the game has been dumbed down to the point that you don't even need coal anymore, simply cook the logs with plans as fuel for torches. spend your night gathering cobble from wherever you decided to hide(preferably around your wheat farm, so you can maintain it throughout the night).
cake requires you to have smelted your first 9 pieces of iron into buckets, and cookies require you to find cocoa beans. these aren't really logical options, but bread is definitely doable.
yes, i believe there should be more food added to the game. no, i believe it should be harder to obtain. food as it is is ridiculous. this is a survival game that has a hunger system: a hunger system with infinite supplies of food that take no effort to obtain.
wheat should grow slower, and produce much less seeds when harvested.
grass shouldn't have wheat seeds hidden in them, i believe wheat should be found growing naturally somewhere in the world to be obtained.
food heals too much hunger, or it goes down too slowly(i think it just heals too much, eating too often would be annoying)

i typically just leave the game music on, if i play my own i can't hear the other ingame sounds. it helps me to be able to hear when things are walking near me, or hearing other monster sounds while in caves, etc

build a platform 8 blocks above the surface of the mushroom you intend to grow, 3x3(or 4x4, can't remember), then remove the vertical blocks leading up to it. this will remove the light/give enough space for the mushrooms to grow.
