Why would you want to have a buggy and unfinished server that soon? It may be playable, but there won't be any enemies in it, the terrain isn't working as it should (giant holes here and there and stuff is repeating).
Let those poor pigs live until notch fixes the bugs and adds missing features. Or not. Who cares about walking bacon anyway...
I don't think the cave sounds are glitched. You must have walked near a cave and the sound played. I don't think the game currently cares if you are in one or not, just near one.

The reason I play on Normal these days is because my wife does. I used to only play on peacefull, but I can't let Mrs Deps be more hardcore than I am!

Really? They have been dissapearing just fine for longer than I can remember here. A couple of weeks at least. It was a bit slow in the beginning but now they do that just fine, unless I forget to remove a branch in one of those big trees.
Just show her minecraft and let her play around with it. If she doesn't like it there's nothing you can do.
My wife got hooked on it, but she likes most videogames. We used to play a lot of Doom and Quake in the past.
As for starting out with survival or creative... My wife saw creative and wasn't that impressed by it. But she got addicted once she tried Alpha.
I'm at work and can therefore not show you my tree fort. Not that it's big or epic in any way. It's just two large trees together with a stone hut with a door at the base of one of them (to protect me while I climb the ladder)
At the top there's a dirt house with my workbench and a wooden house with some chests and a farm on the roof. Took maybe 30 min to build. Yours looks way better.
