You'll have trouble with a 970 at that resolution, 3.5GB VRAM probably won't cut it. A GTX 980 isn't worth it with the price/performance out of whack currently, a 980 Ti will be too expensive, and a 960 won't cut it either.
Maybe see if you can find a secondhand GTX 780 or 780 Ti? I've seen 780 Ti's going for $350ish AUD on OCAU. 980s are currently going for around $650 secondhand.
I wouldn't buy a card new if you can avoid it.

I find it hard to believe that people can't run MC stable with 960's and 280x's, when I chill around 300 FPS maxed out vanilla, and can quite comfortable handle SEUS Ultra ~40FPS at 5760x1080

Don't get a Xeon for gaming. In almost every case, an i7 will perform much better at gaming. Nowadays, games like fewer, fast cores than many, slow cores. As for VRAM, if you are using 1080p, 1GB is enough, 1440p, 2GB, 4k and above 4GB (General rule of thumb, I have 5760x1080 with 1 GB)
I know, but it kept saying that it was the Microsoft display whatever, but that was probly due to having another GPU in the system and having a conflict between my R9 270 and hd 3000.
Thanks for that info about Vram, I really though shaders and big texture backs would need a bit more VRAM.
VRAM is needed for high-resolution displays, RAM is needed for storing things to put on the display.
LinusTechTips has a good video of how much VRAM you need for different resolutions, etc..
and select Win8.1, download and burn to a disk. Insert disk and install Win8.1, enter your key again when promted, continue setup, done. You will have to go into control panel and then click the link to activate online. If it fails, you will have to phone them (free) and they will sort it you out.
I have used it throughout the tech preview, and I really like the HUGE performance gains (for me anyway), and the speed. The new look is nice when compared to Win7 (I never used Win8/8.1)
As for the forced updates, I don't mind them, considering that you only notice it is update when you shutdown/restart. I only just realised that Windows Update is no longer in the control panel! Speaking of the control panel, I miss not being able to directly search it anymore (lots of old apps don't even show up in the search anymore )

Since I now have my 5760x1080 triple monitor setup, I am looking to upgrade my GPU sometime in the coming year.
I already have a GTX 750 and G3258 both overclocked a little bit, and my motherboard doesn't support SLI (only Xfire)
To add to that, I have an Nvidia SHIELD portable, so I won't go over to AMD yet
My budget is ~$600-$700 NZD max
Games I currently play are World of Tanks, Armoured Warfare (soon), and a little bit of Shaders
