I was thinking of making this myself, but I have absolutely zero experience modding.
A skunk would be a semi-passive mob that would follow the AI of farm animals, wandering around aimlessly, and spawning exclusively in forest biomes. They'd be about the size of a cat, and have four hearts of life. If the player approaches too closely, they will freeze and their tail will stiffen, until the offender leaves their personal space. If they continue to be provoked, they would attack the player with a non-damaging spray, that could have a variety of negative effects, like blindness, slowness, nausea, etc. for a period of time. Villagers would refuse to trade with the player. It would be removed instantly in contact with water. (And why not lava, too, for the lulz.)
Perhaps they could be tamed? Once tamed, they'd be able to be bred like normal farm animals, baby skunks would be born tamed. Should a tamed skunk follow the player, their life is increased 50%, to six hearts of life, and will repel hostile mobs within a short distance.
They wouldn't drop anything on death, only give 2-5 experience.
Silly idea heh... But I do really like skunks... ^^;
