I actually have really liked how this update turned out, although improving the villager AI definitely needs to be prioritized over foxes or rocket launcher crafting tables. Being dumb around zombies is one thing, being dumb around illagers is death.
Due to all the glitches going on right now, I'm playing 1.12 until release. Kinda miss customizing worlds, hope that comes out by 1.15.

They can spawn far off from the village, close to the village, in the village outskirts, in the village centre, or even inside the houses depending on the number of waves divided by 5/level of bad omen, respectively.
This also affects whether a beast spawns in Wave 2 or only after Wave 2 and if it has a rider, whether a witch spawns in Wave 4 or not, and the first wave in which pillagers have enchants, which varies from Wave 4 to Wave 6. Notably, I have only seen pillagers spawn inside, never vindicators, beasts, witches, or the Wave 10 evoker.
But you are definitely right about the spawning proximity. It's like zombie sieges and almost as deadly, because sieges also vary in distance from buried in the ground off the outskirts, to buried in the farmland in the outskirt farms, to literally inside the floorboards of houses.
It's very unbalanced, and considering how many resources it takes to build multiple town walls for each layer of the village; and double-layered, doors-only, stairs-for-floors-only homes to protect villagers and let them flee or escape; I think Mojang doesn't want us to build defenses only, but also to set up golems and trained animals to attack, distract, and scare off intruders, including regular night-time mobs like creepers, skeletons, and phantoms which can and often will spawn in villages, and can further damage the player's chances of securing the place.
In any case, raids need to be made easier, and a lot of people would like to see illusioners and maybe more evokers appear for variety, since fighting gets repetitive (but still hard!) once you learn how to deal with each of the less-magical types of illagers. You just use shields for beasts and pillagers, and carry totems of undying when dealing with evokers, vindicators, and witches. Because if all the villagers can defend you, you're getting a free home just for finding villages. Although, yeah, all villager types right now could easily have a 'weapon'.

Splitting recipes across multiple appliances also pertains to technical reasons.
With a single crafting table, it holds a huge recipes map you have to iterate with input ingredients to find what recipe is possible. As recipes list grow, time to llokup the recipe expand by a significant factor.
By having multiple appliances, each one can have a shorter recipes list and be more efficient.
Good point. But as it turns out the new furnaces just work faster on their brand of smeltables, they are not that differentiated.
Maybe the new mason villager will be able to fight?

Put a trapdoor in front of chests or item frames as of 1.7 and you have the same effect except you have to actually open the cabinet door.

Said barrel's recipe being very similar to the original recipe from back in the Factorization mod days, except 2 slabs instead of 1, and planks instead of logs. In fact, now that it's easier to just make barrels, what's the point of chests?
Chests make noise when opened, alerting you to players nearbv. The fact they don't open when they have a ceiling can also be manipulated via sticky piston.
On the other hand, this means we should have all those ugly floating chests in ocean ruins replaced with barrels, especially since some chests have a block that's part of the ruin on top of them but are otherwise floating in water. I hate having to break the ruin open just to find treasure, those things are worth preserving.

There are still recipes which fall into neither food nor metals. But the real problem is that they're pushing everyone towards gameplay where you have a base, you run around and explore/build/conquest/whatever, and then you have to keep returning to it since all your appliances are there. Or you build a million mini-bases everywhere (for caves, Nether caves, and other places where you're likely to circle around more). But that means you're tied to your home more, which is not everyone's style. Now you realistically have to plan and prepare all your stuff in advance of larger trips to The End, mesas, mansions, etc. It's beds and phantoms all over again.

Also, new stuff is nice, but has anything been done to tone down the Beast? It's way harder than the other illager mobs or any non-boss mob really, to the point I find it ridiculous that evokers only come at wave 10 but beasts at wave 2.

The only easy fix I have heard of for the earthquake effect is increasing generation attempts for villages and completely erasing villages that generate on any uneven terrain beyond 3 blocks elevation change per block. I don't like my villages destroyed either, but it's worth the work fixing them if it's nothing drastic like a home in a ravine or on a mountain.

In a server, all the armour stands in a hall set on fire and some of them moved places from where they were, then they all vanished as if burned.
Was this some rare easter egg creepy thing? Or just extreme lag combined with fire aspect? Scared the living daylights out of me.

Has been suggested before, but interferes with caves, and we already have water caves going very far down.

Sometimes mobs bug out and despawn despite conditions saying to not. Possible it also died and despawned somewhere hard to find, then the item despawned.
Also it helps to play with custom settings such that mob blasts return 100% of blasted objects.

I avoided replying as I had a suspicion this was a botpost/data mining thread, but since you reply, I'll corroborate that you need way more space for spruces of any kind to maximize leaf collection. If you only care about wood, and don't want your ground to be podzol due to 2x2s, you need 7 spots or so of space on average to ensure no overlap.
There is snow in the picture shown, hence my suspicion.

It is a bit annoying to go pick up your stuff when it's spread out, especially near cliffs, in water, or in craters, especially with explosive mobs around.
If you fall in lava on an edge, you can get out before you die, if you fall in the center, all your stuff will be gone regardless of the spread.

I started using creepers to kill mobs for me, skeletons too sometimes. This is how you get CDs and mob heads anyway so it made sense.
Using blocks to get up or block off things - always used it, but you need more time than you think to do it. I used to put cobble wall all over my caves to section off dark areas.
