You have a great idea, and I would love to see this in-game, but there are just SO MANY of these posts.
If you were to make the world deeper, then you would have to scale the levels ores are found on, or remove ores entirely like they did with superflat. I think this would be very cool though.

I don't like the idea of not having ores. It would be fun to have sea level at ~10 and still be able to mine. I do agree that you would have to scale the ore deposits, though. Digging down to level 20 in a world with a sea level of 200? Not fun.
It's a common suggestion and many support it. I don't know if they'll get around to it. Considering they made superflat, they might do something along these lines.

With 1.2, Jeb is implementing taller worlds. My first thought was that the worlds would also be deeper too. Sadly, it was not so.
This got me to thinking. What if we could customize the world in way that we have never been able to before?
My suggestion is a pair of sliders. The first slider would control sea level. Do you want to explore gigantic caves and build massive underground dwarf fortresses? Or, on the other hand, do you want to have plenty of room in the sky for your towering wizard castle?
The other slider would control average world height. On one end would be the super-flat world type. On the other, it would generate massive mountains taller than you can comprehend, gargantuan, floating continents would loom over the land.
I wish people would stop complaining about how Minecraft was better in alpha. There are a lot more features now, more to do. This is what you wanted.
I also disagree that terrain generation was better in alpha. In alpha, a biome could be tiny, but in the current version they are huge. And while the terrain IS more flat, they are improving it constantly.
