The level.dat file controls the overall world information and you, but not the blocks in the chunks.
The files in the folders control what's in the chunks, the content of chests, mobs and other stuff related to those.
If you backup your level.dat but not your folders, it pretty much saves the overall world information, your stats and your inventory, but NOT the content of chests, whatever you built, and stuff like that.
Please don't abuse this, or you are pretty much cheating. Get NEI(Not enough items) if you want infinite items.
You cannot find them. You have to find Melon seeds in chests in dungeons, abandoned mineshafts or strongholds, and then plant them with 1 block space for the melon block to grow next to the seed.
I know!! The texture of the sapling is wrong. There's no texture of the sapling like that, it's too bright in the picture ( the colours ). Did I get it?

Edit: You also smelted lots of iron which should of given even more exp.

The cobblestone in your hotbar looks like 32x32 cobblestone.(Looked at "normal" hotbar cobblestone, still looked 32x32, must of just been me.)
The durability bar on the sword looks green.
The durability bar on the shovel doesn't look as green as usual.
