if you hit a mob, there's a knockback effect. If you time it right you can kill them without them hitting you. That's kind of tricky though, and I wouldn't suggest it without armor.
Personally, if my goal is to actually kill the enderman, I'll just quickly build a two high roof over my head. They don't fit under, so as long as you don't get too close to the edge you'll be fine. If you don't want to fight, just splash water on them like others have said. If you're not carrying a water bucket on you regularly (I consider this vital equipment) then hop in a lake or something.

Not too far away, near the shore, there is a cave opening leading to an almost straight shot down to level 15, with a pretty expansive looking cave system. (Near X:57 Z:258)
In a nearby swamp, I found two ravines running parallel and cut through by a third. (Near X:285 Z:99)
And near the swamp was a rather nice looking extreme hills biome, which is the only thing I really bothered taking screenshots of. I mean, I tried the others, but you can't really tell what they are from a photo.

Flying around in a relative circle around spawn, I also found a few villages, and some other desireable structures. I didn't bother marking down coords though.
