Your red mushrooms are growing then the brown should to. Mushrooms randomly spread when they do an update tick but the chance is fairly small. You can either plant more or be patient.
Cactus green is used to make three different color dyes; green,lime, and cyan. Possibly four because I can't recall if any of the magenta dye recipes use it.
Due to the limited size of the xbox worlds it is possible to have a world with no desert biomes and therefor no cacti. I've never actually seen a world without sugarcane, although I'm sure it's possible. The OP is just suggesting sometthing to alleviate this problem besides starting new world.

They spread prettly quickly. I like to use cobblestone under the mushrooms because it makes identifying where to replant easier. Plus if you raise the mushrooms 1 block you can use water to gather them all and not have to replant.
Wheat can totally be stacked to 64. You must be thinking of bread. But you're right about needing the crafting table to make it. Another good alternative is mushroom stew. Just requires two extra slots but heals much better than bread.
I always start buildings by laying out the foundation in the shape I want the building to be. Then lay out the floor on top of thqt. Then the walls come next. Never discount the value of a well laid out floor plan.
