Yeah they probably do, but industrial craft would have to be my #1 favourite mod if I had to choose. And it seems to conflict with the other two.
I actually played on my friends SMP server a while ago with a few people with planes installed, teamed up with another guy and we bombed this persons fortress to the ground, was sooo much fun!
I don't know about you, but those three mods have got to be my most favourite mods.
It's a shame they don't all work together, well. Atleast I've had no luck getting even two of them to work together.
I've always liked the idea of making structures to house nuclear reactors, airstrips and workshops for planes and bombs, and having warehouses full of ammo and guns. A kinda futuristic minecraft.
What is your opinion on these mods? I'm just curious.

What job will take up (at first): I'd prefer to be a mix of Farmer/Woodcutter/Cook. But If I have to stick with a certain one to begin with that's fine.

To be honest, it's so much more satisfying building something legit.
I use invedit sometimes, I've just had to get rid of it from my computer because it's to tempting to "just add a couple diamond tools, thats all I'll add"
This isn't really a suggestion since I don't really have any idea how it would work.
I think having cement or something similar would be great to help make a good foundation for fortresses and houses, of course you could use it for other things, but my random idea was mainly about foundations.
In the future when/if Notch adds mobs that can burrow into your base if it's just dirt or something common, you're probably going to have to make a foundation under your fortress, a thick layer of stone or something to protect your base from those mobs.
The idea I had was cement, and a cement mixer.
I do not know how you would get cement, or how it is made.
But the idea I had was
Example:
1. You dig a 10x10 pit about 4-5 blocks deep.
2. You place the cement mixer near the hole.
3. You right click the mixer and add water and cement like you add coal and ore in the furnace.
4. The mixer would start rotating slowly and start pouring out cement into the pit it was placed next to.
5. It would pour cement for a certain period of time depending on how much water and cement was put in it.
6. The pit would eventually start filling up to the top, so long as you keep feeding the mixer water & cement.
7. When your pit is filled it would take a full minecraft day to dry and become solid.
8. Enjoy your foundation
This could also be used in other ways, and I feel it could be abused in some ways, I don't really know what though.
"This idea is useless, you can just fill your pit with blocks manually!"
A useless idea? maybe. I had figured a thick cement foundation would be tough to break through and it should be worth gathering all the resources to make one.
Currently they don't go away after you chop down all the wood from it.
When they where not bugged, they would go away after a while and drop saplings.
I really don't understand why they don't dissapear quicker though, it's annoying having to burn down those big ass trees leaves because they take so long to go away and look ugly.
Would it be too easy to get saplings or something? because it's annoying.
First, Creepers stealing stuff from chests.
Then, mobs breaking into your house with commando-like organization.
Now mobs just staring at you as if examining you.
Can mobs get any more dangerous and creepy?
My theory is that creepers actually have a giant mobile fortress.
It's always moving, which is why nobody has ever seen it.
The core of the mobile fortress contains a creeper cloning laboratory, supplying the creepers with limitless soldiers.
The creepers just watching us are very likely just scouts radioing in information.

I was thinking of eventually linking them all together via a railroad
I'm making a small fortress ontop of this hilltop to start with. I'm a bit stumped as to where to put a few things.

The area circled in red I was thinking of putting up a 3 block thick wall. But this would force me to have to make the area larger.
I was thinking of putting a watchtower at the blue cross, or am going to instead build a larger watchtower/keep in the center circled in yellow.
