Dirt: passive in the day, attacks at night or when attacked by shovel in the day.
Way it's hidden: it looks like complete normal ground only a little darker.
Drops: Dirt and seeds.
Wood: passive unless chopped by a axe.
Way it's hidden: This one kinda stands out. It's a small human shaped tree with leaves for a head and hands.
Drops: Sablings and wood.
Gravel: Arressive.
Way it's hidden: Under a large out of place gravel mound.
Drops: Flint and gravel
Sand: Always passive even when attacked.
Way it's hidden: On top of a pile of sand human shaped.
Drops: Sand
Stone: Agrressive.
Way it's hidden: Like dirt but has a few blocks of cobblestone mixed in as a leg or foot.
Drops: Stone or cobblestone.
(now it gets fun)
Iron (ore): Passive unless mined with a pick higher.
Way it's hidden: none, you might only find a human shaped figure cut out of a wall, it's found walking around caves and dungeons.
Drops: Iron ore.
Iron (smelted): Arressive.
Way it's hidden: It jumps out of lava, pretty much a iron ore elemental fell in and got smelted.
Drops: iron ignots or iron items.
Gold (ore): Passive, never attacks.
Way it's hidden: free roaming.
Drops: gold.
Gold (smelted): Passive unless attacked by a gold item.
Way it's hidden: Same as Iron (Smelted).
Drops: Gold ignots or gold items.
Diamond: Aggessive.
Way it's hidden: In walls, pops out when someone is near by. (it looks like a diamond ore with stone as it's arms, legs)
Drops: Diamond (2)
(Elemental rooms)
Same look as dungeons, but with a block elemental in the center.
Iron (block): Very aggressive, attacks with iron sword.
Drops: Iron block, or iron Element weapons/armour. 2x uses for weapons and 2x defence for armour.
Gold (block): Aggressive, attacks with gold arrows.
Drops: Gold block or gold element arrows. Gold arrows 2x arrow damage.
Diamond (block): VERY Aggressive, Attacks with diamond sword.
Drops: Diamond block, or diamond element/weapons armour. same bonues.
(element items are very rare and are found very deep).

Just a idea...I know this is put together badly.

a new armour slot would have to be added and it would add another 2 rows of space to hold stuff. it's a simple left click to open.
