One of my favorite aspects of Minecraft, actually. Seven Days to Die forces updates (actually, I think they may have stopped doing this by now, but it's been a while since I played), and that means that everyone loses the level they were playing on, everyone has to put up with whatever bugs are present in the new version, and if something makes the new version unplayable then everyone has to wait for the dev to patch it.
If you can choose to play at an earlier release, you can define your experience much better than you can being forced to stay updated. And in a community with this much modding, it's vital to be able to stick around with older versions while the newer versions wait for mod updates. Not to mention people who want to keep playing back before Hunger was a mechanic, or will be sticking at 1.7.10 for life just to avoid water temple spawns ruining their worlds (I was amused to see a temple spawn in midair in the Super Hostile Race the Wool map, to one side of the Painwater mazes).
Still wish you had more control over spawn conditions. Not just whether structures spawn in the first place but which structures spawn, and not just monsters or no monsters but which mobs spawn and how frequently. Same with biomes, actually.
Everything you said is exactly how I feel.

If you actually read these you would notice 2 things.
1. Almost all of these blocks feel vanilla
2. The mod allows even greater cosmetic customization which does not in any way break minecraft. 1.12 and 1.13 need this.
As of the time of this message Mojang and Microsoft should note I don't play minecraft vanilla due to it feeling cosmetically boring. When I add this mod though I can be extremely creative. I can create monolithic temples and feel like they are actually beautiful. I feel like minecraft should allow slopes and not just stairs it feels weird. I am OCD, ADD and Bipolar and as an OCD player things need to be a certain way or feel and when I cannot experience things a certain way; where others see joy I only get annoyed and feel agony.

Update to 1.10.2 or 1.11 - 1.7.10 has issues and I wish mod devs would make the leap.
