I'm glad everyone's relieved this isn't planned for the Java edition of Minecraft, but do expect there to be less mods being worked on for the pc version in future. I would expect a lot of mod makers will shift their attention to the paid platform where they can get a little compensation for their work. Think about it, if you were a mod maker spending countless hours modding wouldn't you prefer getting something for your efforts?
I don't plan on shifting platforms with my mods. And as for earning a living off of it I would think it's a pipe dream. Sure, some may hit it big, but by and large not enough money will be made by the average modder. It's like having a dream of being a video game programmer when in high school, and then you finally realize that you need food on the table to survive.

Of course a pack with just OptiFine and Forge will work. Problem is a conflict with one of the other mods. My suggestion was to follow the advice in the linked thread. Essentially, remove *only* OptiFine from the pack and see if it corrects.

For clarity, the sounds for footsteps in Dynamic Surroundings are the sounds from Presence Footsteps. The difference is that by default I reduce the sound volume for footsteps. There is a setting where you can change the scaling factor back to 1 which would play the footsteps at full volume.

Assuming that the grief was localized to a player's base I am sure there are other things that could have been done if the owner/admin had experience. The server I play on when stuff like that happens they can restore a region or chunk depending. If it is a massive grief across the server then I would have expected a restore from backup, but I get the sense that this server owner does not do backups (which is bad).

But the thing I don't get is why players would rather watch someone play Minecraft rather than do it themselves. I can understand wanting to watch videos on how to build things or learn about mechanics, but just to watch them play?

To answer your question as to why that's in the log:
A lot of mods use plugin transformers to modify the Minecraft Java code on the fly. They do this to provide their own logic or to extend functionality. The mod author normally put extra information on the transformer to indicate what specific Minecraft version it is intended to modify (the MCVersion annotation). If this information is not there Forge records it in the log because bad things *may* happen since the transformer will run against any version of Minecraft. Mods jar that can run with several different Minecraft versions do not put this annotation in, because if they did it would no longer be able to run against multiple different versions of Minecraft.

The OP would need to clarify, but I think he wants grass instead of dirt in his underground tree farm. I don't think is complaining about the trees not growing or needing grass to grow trees. When I make my tree farms underground I want grass blocks, too, instead of dirt. Short of Silk Touching a grass block you can do it old school - place a dirt block next to grass on the surface, and then create a stair case of dirt down. Would take a while for grass to grow down but its possible.
