I think "I now have a Significant Other" has much to do with people leaving Minecraft. My wife enjoys Minecraft as we play together, and she has made a few friends also. I think, "This is where my friends hang out" has much more staying-power for the game than so much of features and so on. I do think the feature changes are a huge factor in "staying power", but I wouldn't discount friendships keeping someone in, or friendships outside of the game leaving less time for Minecraft.
I have both a Java Snapshot server I'm hosting for a few close friends and a Bedrock server for the same group. The two versions do have differences, sometimes in favor of MCJE, sometimes in favor of MCBE. Bedrock doesn't have data-packs yet. Add-ons in Java would allow for much more "creative editing" of entities such as how easily Guardians were changed to Sharks for Relics of the Privateers, and it would be trivial to do the same if only add-ons were in Java without having to "mod" anything.
Each version also appears to be informing how to make progress in the other. For instance, 1.9 combat isn't in Bedrock yet. It could easily be added, but Mojang appears quite shy in how they are going to make that change. Meanwhile, Observers are a feature that worked well in Bedrock to avoid introducing the "Piston BUD switch bug". Not every change is a win, but on the whole I think it is a net positive for both platforms and the Minecraft franchise moving forward.
I agree with @vintproyk: Minecraft never went "bad", it just changes over time as the game SHOULD if it is to live.

No support. When silverfish were found in only strongholds, having a silverfish come from a block meant Oh wow I am near a stronghold! Enderdragon here I come! I will admit they can be bit of nuisance, but eh they are just a little pest that doesn't affect much anyway.
I agree, as it is, emeralds are valuable enough and occasional silverfish eggs provide a decent defense. -

Besides the fact that emeralds are only found in the Extreme Hills biome which can be difficult to find sometimes, Mojang adding silverfish to the same biome does add a bit of a challenge. Plus silverfish can appear if you uncover one which puts you in an interesting exterminator vs an insect colony scenario.
If you break one silverfish block, only that one silverfish will attack you. If you hit it without killing it, then more silverfish appear. -

The crafting recipes for the different kinds of soup brings up an interesting question in my mind.Where does the liquid come from?Obviously the sprites for these items show a liquid, but you don't use a water bucket or anything like that whenever you craft them.After thinking it over, I came up with the idea that you can fill bowls up with water via cauldrons or a water source similar to glass bottles.However, players will need to fill up their bowls with water before making some stew since that would make much more sense than putting objects inside of a bowl and liquid magically appearing.Edit:
I came up with an idea to make bowls a bit more useful since their current use is just to make soup, and this idea fits well with my "putting water inside of bowls" mechanic.
So I was thinking about dyes and such and I thought that maybe bowls could be used in the dying process.
Then the idea came where you could craft paint by putting any type of dye and a bowl full of water in a crafting table.
Paint can be used to dye leather armor instead of dyes, but when it is used to dye leather armor the outlines of the armor won't be as visible as usual since the paint will be thicker than dyes.
Paint can also be used to change a painting to a desired picture by right clicking a placed painting with some paint in hand. Doing this will open up an interface where you can choose any of the different picture formats, respectively. However, the area around the painting will determine which paintings you can change the painting into. Note that the color of the paint doesn't matter in this process. This would save a lot of time because we all know how tedious paintings can be.
Using paint to dye wool will lessen the visibility of the outline and the color will be a bit darker than usual, and the same will happen with sheep as well as stained clay, concrete, concrete powder, and even terracotta.
After you use the paint 3-5 times, the bowl will be empty again, and you will have to refill it. This allows players to dye multiple things before having to craft more paint making paint a bit more user friendly in a sense.

While I have never really used Mending before, I do know what the enchantment does, and I understand how it works as well. According to what you said about balancing the enchantment to make tools regain durability by gaining experience from blocks, I think that this problem needs to be fixed.

There aren't very many kinds of weather in Minecraft, and desert/mesa biomes don't have any weather instances to begin with. So why don't we add a type of weather inside of desert/ mesa biomes to give them a bit of variety as well as making it to where deserts aren't completely void of weather, so players can't always avoid weather just by going into a desert/mesa biome? I came up with dust storms since dust storms happen a fair amount in deserts in the real world.

I like your ideas of balancing the food system a bit, but I don't know if making food hard to get will make the game a bit too challenging for the player if they spawn in a desert with nothing in sight for miles around. So I am pretty mixed on this suggestion, but I will give you some support. Also, I think the saturation thing would probably help me understand saturation a bit more because I am still not sure how it works.

I have started a hardcore world recently. I am challenging myself to see how long I can survive. I have been staying in a village so far, and I am currently working on defending it by making it zombie proof in a way. I am also working on flattening the terrain a bit, so the villagers don't get stuck in a hole or something.
