Partial Support. I LOVE this idea, but I think the Red Bee might be too overpowered. Have you ever tried to hit bats? Pain in the butt to do so. And since the red bee deals 8 damage per hit, and according to your description, it behaves in ways similar to a bat, this is one killing machine. Maybe turn down the damage a bit? Overall Support, nice idea!
I turned down the damage a bit, but I have to say that bats fly rather randomly, but red bees are focused on player.

Pretty good suggestion, but I don't think that anything you drink should give any potion effects, like bottled honey. Maybe it should just remove certain effects? (because y'know, honey is pretty good when you're sick) Like nausea, slowness or mining fatigue. Support!
I think that would be redundant, as milk removes all the effects, and honey is harder to obtain, making it pretty UP

Many of these would be helpful. However, some of them are actually quite easy to implement in maps already, with redstone and command blocks. For example:
dayDuration and dayNightRatio -- Possible to set up with clocks and /time add <value>. Add some daylight sensors and you can do an additional /time add <value> during the day/night to affect the day/night ratio. Slowing down the day/night cycle is possible, too, but requires a scripted series of /time set <value> commands [Edit: or perhaps /time add <24000-value>, although I think that would add game days to stats].
useHunger -- To effectively disable hunger, you can just give everyone the Saturation effect on a clock and hide the particle effects:
/effect @a 23 1000000 1 1
However, many of the rest of them would be useful. Some would be quite difficult to implement, but you've acknowledged that, which I appreciate.
I knew about these, but they can be resource intensive (not really the hunger one, but day/night one could be really, really lag-producing), so I think these should be gamerules, especially because they are not only for mapmakers, but also for players who want to change their survival gameplay, and they don't havea access to command blocks
It should. They could easily compact it into a number, have it act as multiple gamerules internally, or just have a gamerule contain a string. Based on my knowledge of the minecraft code, it wouldn't actually be that tricky

Probably, but this one is simpler than Custom Items and allows assigning custom values to existing armor, without the need to make textures and everything else. There are attributes for movement speed, maximum health, attack damage, so I think this one would fit nicely with those. This was meant to be attribute system improvement.

This seems nice, but axe shouldn't be more effective against shields because it already has the ability to disable them for 5 seconds.
