Mob textures are 8 x 8 and Block/Item textures are 16 by 16 because they follow the power of two rule
The maximum stack number is probably just some numbers chosen by the developers.
The maximum height is 256 because it is the highest value for unsigned bytes.
Pretty much anything to do with 2, 4, 8, 16, 32, 64, 128, 256, 512, 1024, 2048, 4096, etc. is because of the power of two rule.

Because Minecraft isn't open source. They're not supposed to give the source out, so we players need to use the old mcp way to translate the obfuscated code to something we can use and edit
