Cover a flat plain with water, then build stilted houses and connect them with lily pads.
Create shops, like cobblers, tailors, etc
Create a market square, with trading posts of fence, wool, and logs.
Build a church with a graveyard.
Lighthouses. REAL(ish) ones, near water.
Create a harbor, with docks.
On servers I like to build my houses out of a patchwork of snow, dirt, and sandstone because it's an eyesore and annoying to remove.
Other than that, Cobble, brick, logs and planks do it for me.
Use blacksmith lava to "mold" nether gates using buckets and water. Save chest obsidian and diamonds for enchantment tables, which are better in the long term with the slime stuff. Don't waste a diamond pickaxe to gather obsidian when you already had item-form obsidian and "placeable" obsidian, in a sense.
You can also set up iron golem grinding machines using lava to give yourself a steady supply of iron, though not large.
