4 to me, but this is entirely subjective. The only one I would rule out absolutely is 2, way too much 'wood cabin' feel. Which begs the question, if you want to make a mansion, why are you making it entirely out of wood?
Seriously what's taking so long... The update was submitted on the 9th, and XBLA updates usually take at most a week to go through certification. It's been 10 days nearly!
For the first, second, and third, what issues are going to be fixed? I am not aware of what is bugged. For the minecart one, will they become slower/faster and/or will it impact the speed increase from powered rails?
On the Xbox version Minecraft servers are player-hosted, which means without the host there is no client-host connection, thus no "server." If they were to add real server options, they would likely need to do some coding, or at least copy and modify code from the PC version. It was built this way so "servers" could exist for each save on your profile without the need for physical hardware apart from the 360.
-How large are the chunks, width and height?
Chunks are the entire height, 16x16.
-Are they the same size as those on the PC?
Yes.
-If chunk mechanics work like the PC, are there spawn chunks as well?
Yes there are.
-Lastly, if spawn chunks exist on mcx360, how large is the area? It encompasses 4 chunks, or 32x32. There is also protection from certain things an extra 2 blocks in each direction (so 34x34) from things like lava. That is also how I deduced this information. Try to drop lava, doesn't work = protected. The 32x32 size comes from a test I did a long time ago when I continually killed myself without a spawn point.
The test was in preparation of building a death spawn. Lava cascading down all sides, with obsidian scattered on the bottom, like I would imagine a volatile volcano would be. I actually had my own observatory in the wall as well. MUAHAHAHAHA! This was also pre-creative, so it was just me and a buddy digging all the way down to bedrock.
I have a world with a fortress, created using the same seed that a friend used, and he has plenty of blazes. I have none.
So, it's a big deal for me, since I can't even make an experience farm out of them. Luckily my seed also has a double zombie spawner, so I have a good experience farm already.
I had to add in a friggin' blaze rod from creative just to make a brewing stand.
It should be NW... the two directions where the numbers for X and Z decrease in size.
I ended up testing it since I wasn't sure if it took northwest as how it appears on the map or which directions go positive. It is in regards to the map, going northwest as you say.

I don't think the minecart fix will hurt my station then. The powered tracks are spaced a little too close as it is.

It's funny you should say that, I plan on trailing grass all the way down to bedrock just so I can make the farm there.
