Well, most importantly you know that they do play minecraft - and when they do it (I doubt they will collect a lot of data about ingame actions).
If you have enough data, it becomes very easy to combine users into groups - for example, people that play regularly in the evening probably have a day job. Combine that with data gathered from other sources (Say, the microsoft store, xbox network etc.) and you get a pretty good idea of their age, interests, habits and more.

sometimes also happens to boats and players, especially in LAN worlds. i don't think this is lan related.
you could try F3+B which shows all entity's hitboxes. also F3+T to reload all textures.

no, this release is common and stable.
we're still looking for a log, so try some launcher that uses a terminal window, (any modpack launcher apart from cursevoice and technic afaik). the console output should do it.

if you just knew how many errors get caused by win10 and how few by win7
now, to business: there are no errors shown in the log. please post the full crash log, you can find it in .minecraft/logs/ (usually named latest.log or something similiar).
