1) As stated by a previous poster, You can kill mobs with flint & steel. As long as fire isn't nerfed on that specific server.
2) Mobs can drown. Most of them can't get out of a regular water current.
3) They can also suffocate. I've trapped a chicken in a pit and placed gravel ontop, which fell down and buried it.
4) If you can't do any of the above, push them into lava. If they touch lava for only a split-second, they'll only be set alight. When they're actually in it, they disappear almost instantly.
Very creative ideas, I think the Cactus Shaman and Minions are my favourite so far. It would be very interesting to see all of these in "Block form"...
I've read somewhere else that facing higher/lower will allow you to choose which way stairs will go. I haven't been able to try myself, but you could and reply back with confirmation.
A Creeper. Made out of diamond with the blast radius of 100 by 100 blocks. Then it wouldn't even need a no-clip.
Although... on a more serious note, if you REALLY wanted a challenge, give mobs an option to tear down blocks/doors themselves, forcing you to build with harder materials.
Actually, I'm pretty sure I remember seeing "Crouch" or something pretty similar on his to-do list. Although crawling would be nice too. Would allow for some interesting scenarios.
