I fought the dragon 18 times recently to open all the outer end island portals. I was never able to hit it with my sword when it was hovering over the portal. I had to use arrows every time. Having an elytra and bow with infinity helped in that department.

So far as I know, I've never damaged any villager in any way. I also kept removing and resetting workstations, not to get great trades, but mainly to get librarians to sell the spell books I needed. I think I changed one librarian several dozen times to get a Silk Touch seller. I only have 16 villagers in my trading hall and don't want to add more.
My only current lack is one selling Fortune III and I think I'll let one of my Mending sellers get zombified to try to get the spell I need. Realize there's a 50% chance he'll be killed but there are still villagers in the breeder to replace him.
If you change your game difficulty to hard there is a 100% chance of zombification. When I started dealing with villager conversion I set my difficulty to hard so the villagers won't die. Ended up just leaving it there but haven't had any issues since I sleep most nights and have heavily enchanted armor.

There are several ways to lower prices. Players now have a reputation with villagers. The more you trade, the better your reputation. If you hit a villager, it will lower your reputation. The best way to increase your reputation is to turn a villager into a zombie villager and then cure that villager. If you have already set their trades, they will keep the same trades.
As an example, I have a villager that has a Mending book trade that is normally 10 emeralds and a book for the enchanted book. After turning the villager into a zombie villager and curing him, he now sells the Mending book for 1 emerald and a book.

Another possibility is that the villagers lost sight of their beds or workstations and they need to be broken and replaced.

Next you should set up a way to turn them all into zombie villagers and then cure them. You can get really good deals on the enchantment books that way and its also a good way to get glass.

My last death in the nether was probably about a year ago as well. I was mining quartz and ended up whacking a pigman by accident. In my attempt to fly away, my elytra did not activate and I fell into lava. Now I had full diamond gear with fire protection on one of the pieces so I was able to get out of the lava with rockets and my elytra. Then I experienced kinetic energy from the cliff face I flew into. My items sprayed all over the place and most of it fell back into the lava.

I put my trading hall about 90 blocks away from the breeder and it seems to be find. My world is more industrial so I just have large tubes going between the buildings to make transportation easier.

Pillagers continue to spawn in a 71x71x71 cube centered on the pillager outpost. This means that they will continue to spawn even if you destroy the tower and waterlog the surface. They can still spawn in areas underneath the outpost and above the ground level if there are spawnable blocks available. The best possible solution is to remove all spawning spaces from the area. Either through TNT flying machines or slabs or water.
I have a tower that I turned into a farm so i can get Bad Omen whenever I need it. I restricted the spawning spaces by slabbing an outer ring area around the original outpost.

This is the one I used when I was in 1.13.2. It uses a villager to plant the potatoes and light levels so it auto breaks. The farm will break in 1.14 due to the villager changes but I got about 35 shulker boxes of potatoes for trading purposes before I updated.

One thing you should definitely do is look up reference images on google. Searching things like "Dwarfish kingdom," "Castle," and "Elven City," should help you come up with ideas for the different styles that will be appropriate for each kingdom. The other thing to remember is to take each one in small chunks. Building large scale builds in survival is all about perseverance. The thing that always gets me in the end are the small details.

Spent a couple days ghast hunting in the nether. Gathered more than a stack of ghast tears. Fought the ender dragon 18 more times to open all the rest of outer end gateways.
Next step: find a good return gateway in the outer end islands so I can make a wither rose farm.

The day/night cycle continues if you are in the nether or overworld or end. If you have a villager in the nether or end and a bed available they will still sleep on the day/night cycle as if they were in the overworld.
If you spend the equivalent of 6 minecraft days in the nether, then you will spawn phantoms in the overworld equivalent to staying up 6 days/nights. It sounds like what you are talking about things like furnaces not smelting or plants not growing while you are in the nether. That is because those are conditional on player location. A player has to be loading the chunks for those things to progress.
