I like the ocelots. They look much better than the house cats. Leave the house cats to Mo' Creatures. I want to tame an ocelot, and have it stay an ocelot!
Can we get some more aggressive mobs, too? Someone earlier in the thread mentioned boars. That'd be pretty cool. Just color pigs black, and give them tusks.
I think they have become very boring. I usually spawn on top of a tree, with trees as far as the eye can see. Or I spawn in a field, with grass as far as the eye can see. Or I spawn in an ocean, with water as far as the eye can see. Or in a swamp, with ugly green grass as far as the eye can see. Or I spawn in a desert, with sand as far as the eye can see.
Snow and mountain biomes are almost nonexistent for me.

Just like when I tame a wolf, it stays a wolf.

You could throw in quests like killing monsters around the village at night.

Mobs that should be added:
Horses - Tameable, should be fairly rare. Makes travel faster. Need saddle to ride.
Birds - Crow, cardinal, blue Grosbeak, and dove's should be added. I just can't see a canary or parrot in Minecraft.
Rabbits - When killed, will yield a raw rabbit leg. Common.
Bears - Passive during the day, aggressive at night. Yield fur/wool?
Rats - Only spawn in caves. Aggressive. Yield rotten flesh. (rats carry disease, makes sense to me)
(These give oceans more life)
Dolphins - Tameable, should be fairly rare. Basically horses of water. Will attack, if attacked. Need saddle to ride.
Sharks - Aggressive, fairly rare.
Fish (all 10 colors) - Yield raw fish, and sometimes fish eggs. The eggs are for creating ponds/aquariums.
