Will the seasons change like in real life? Where in autumn the trees turn red, yellow, or brown? And in Winter the trees will have blankets of snow on them? Also I was wondering when the patreon would be up? I want to donate something.

Yep, the plan is to have leaves change, snow fall, etc. The patreon will be up when we are closer or have some type of working snapshot release. Patreon users will probably be able to serve as beta-testers and test newest material while experiencing content. However these things might change.
Can you give me a list of fish that will (as in discussed with the team, coders, modelers and has been accepted) be added in as mobs, I want to know so I can (again) make cages, or should I say aquariums. Also I wanted to suggest that you add in winter hares, and while in snow biomes their fur color is white, or add the fur changing ability to the cotton tail, either one I'm fine with. We don't have a finalized list of fish yet, but we currently have a salmon and a cichlid. We will have many more.
We will have animals with seasonal skins, that shift based upon temperature or climatic conditions.
We will eventually have seasons as well and a minecraft "year", but it still in conceptual development.
Also I want to know, if an animal dies, will its carcass be left there, and eaten by vultures if you don't loot it? I'm pretty sure this would be hard to program, but I just wanted to know if this has already been on your mind.

Yes we'll have some animals in the first snapshot that will function well enough in gameplay.

Exactly, I would say all animals will be affected by this general change, so the difference in size between animals is still be relatively same. Where all "small" animals are the same "small" and equally bigger than their real world sources.

I would like to ask something regarding compatibility with other mods.. especially water mob mods (Mo'creatures, Fantasticfish, Fossils and Archaeology),
will "Saltwater" and "Freshwater" affect the spawns of these mobs. I really want this mod in a private mod pack, but I need to know the answer. Other than this I think this mod is amazing, and I would love to see an alpha release. -a123b23, or Ryan
P.S. Will this be like the Eco Survival game, where when you leave the world, animals still move and the world is still changing, even without your presence..
We have made forge liquids for both finite and infinite versions of multiple types of water. Minecraft vanilla water is treated by EC as saltwater.
To the best of my knowledge, there should be no compatibility problems, unless those mods are completely dependent on "vanilla water" in their code. However, vanilla water exists in EcoCraft so it should work just fine, however I cant obviously speak for "all mods".
There will eventually be an EcoCraft API that will allow any modder to use EcoCraft code functions such as the "living/dying/growing" biology code, the AI system, Genetics, etc.
This will be in some ways an "Eco Survival Game". Say you leave a chunk, and come back to it 20 mc days later, it will (in as best as possible) simulate the 20 days.
On a server, time will obviously be continuous and you can setup certain chunks to be loaded in the game at all times, effectively allowing everything to run without a players presence.
Will you have prints for the models... Because I think it works for JC but idk if it will work well for EC so I think instead of blueprints you should have the models in field guid form like the ones from ARK survival evolved

A lot of very small animals will be bigger than they are in nature, simply because it would be silly to have very tiny mobs.
We plan to add a ton of fish and also make the aquatic ecosystem alongside the land.

I think it had something to do with the Jurassicraft thread (that is still locked) and some "commotion" that was caused there.
However work on our end hasn't stopped. We made a new website for both JC and EC.
