Wow, this is nothing short of a brilliant idea. Even a floating bottle with a map that has an x on it that takes you over a place that has a diamond block. Even just having a pumpkin seed in it would be rad.

Accidents and miss-places are sometimes the best thing that can happen to a build. We never know when a seemingly unwanted block placement will turn into a magnificent addition.

This is why you are having difficulties. It really has nothing to so with having skill or not having skill. No one is here to judge your character on how good your Minecraft builds are. Since you are use to making boxes, start with a box. Then make a couple more boxes. Then connect the boxes. Then make each box different. etc, etc. When you are practicing, don't change something just because it looks silly. Keep on building and keep on adding more silly things. Eventually one of the silly things will be rad.

Always use multiple colors and textures, but now to many. Use contrasts, and lack of, to your advantage.
Avoid basic geometric shapes as a guide to an entire building. Though use the basic shapes to form the sections of a particular building.
Accents are always good. Though having too many will render the reasons for having accents useless.
Do things you've never done before.
Try running around in a confined area and placing blocks randomly. Then start connecting the random blocks to form a structure.
Look at objects not as what they are, but what they could be. Fence posts and stairs aren't just for making fences and staircases.
Practice, practice, practice.
