I do get an unnerving feeling sometimes in single player. Maybe that explains why I always end up living in, or close by, a village. Last night, for example, I was branch mining and I was in this 1X2 tunnel, I must have gone close to 500 blocks and all of a sudden I got this bit of claustrophobia and I wanted to get out of that tunnel as fast as I could. It doesn't happen often but, yea I know what you mean, sometimes the loneliness is kinda creepy.
I think the best thing would be for you to change from peaceful to easy. The mobs really aren't that hard or scary but playing on easy will add a bit more strategy and planning to your gameplay and make it more interesting.
As others have said, maybe take a little break. No matter how much you love or enjoy something, if you do it too much, you're eventually gonna get burned out. I love Minecraft but every so often I go through a phase where I just don't feel like playing it. There are times when I enjoy watching video of others people playing rather than actually playing the game myself.
Eventually I will see an amazing build that someone posted and it gives me the incentive to want to play again.
The hardest part for me is staying motivated after a few days in a new world. Once I have weapons, a shelter, and a steady food source, I kinda start to get bored. So I only play on hardcore now.
The best way to learn is to just start playing. You don't need to know or learn every new thing at once. As you play and discover new stuff, refer to the wiki.
The exact reason why I watch people like xisuma, etho, and docm. Their let's plays are informtive and intertaining.

Not really a fisherman myself. Just not into it. I pretty much only fish when I need to trade with villagers. If you're worried about mobs while fishing, build a fishing hut.
Gathering and collecting resources is very relaxing to me. The only thing I ever put much effort into building for myself is a large storage area. I enjoy sometimes turning off my brain after a long day and branch mining or harvesting and replanting a huge wheat field, or breeding animals. I don't use any automated redstone contraptions, that would remove all the fun for me. I play with my son, he loves to build huge structures so I always stay busy keeping the required building supplies stocked up. We make a good team.
I discovered Minecraft because of my kids! I've been a gamer since the beginning of time, actually since the mid 1970's when my Dad bought me a Pong console at Sears to play on our TV. So my kids ask me to buy/download this game called Minecraft, I never heard of it. So I read a bit about it and it seems ok and legit so I buy an account. Then they want to play together so I buy another account.
My first reaction was "hmm this game looks kinda childish, probably not something that would interest me". But the more I watched and learned and played, the more I loved it. So now Daddy has his own account and my kids and I have a nice new 1.7.2 LAN game up and running. The only problem I have is keeping my diamonds hidden from my daughter because she burns through them faster than anybody.
