I prefer to keep the crafting table. I'd like to just say it makes more sense to think that the inventory crafting is the same as crafting objects by simple handiwork such as torches and crafting tables are actual workspaces equipped with tools on the side where you need more than just your hands to make the more complicated stuff such as pistons but logic is not a strong reason.
Gameplay-wise, I would rather have to keep the crafting table since it marks progress by unlocking the rest of the recipes.
I'd like to see this added but if this was to be implemented like regular water, at least 480 different blocks have to be implemented. But adding a color tag like the shulker box may be an alternative.
For colour mixing, I am unsure how Minecraft would handle it. The blending of colours seems difficult to program but I think it's possible.
Overall, I like the idea but from a technical standpoint, it seems difficult to implement.
Rarely days elapsed will be a problem if you use /time but I like the regional difficulty change so I'll support that. For the first idea, I propose an extra optional argument for the /time command:
I'll call it the day argument. Defaults to same which sets it on the same day and previous and next sets it on the previous or next day respectively. Entering a value instead will set it to the specified day. More complicated than it should be for something that's rarely used.
As stated before, if you don't want to lose your stuff upon death, turn on keepInventory. Dropping your items and having to retrieve them again is part of the survival experience and this will ruin it.
The Nether Star is already hard to obtain and a beacon is already a well-deserved reward, therefore I don't think it needs additional use. A 128x128 is a ridiculously large area and basically turns that area to peaceful difficulty which I think is overpowered, no matter how high the cost.

Yes like Hex said, that would be an insane number of blocks to add. It's possible but I don't think the devs want to add that many data values for a single block.

The code of armour just determines its colour. It's just a decimal number converted to hex.
I perceive it to be slightly similar to coloured light.

It's pretty cool and would make more compact but it won't work since there can only be one block in any given coordinate.
