-One inventory slot of Steak can hold 256 hunger points, more than any other food besides Porkchops.
-It takes only two wheat to produce an average of 2 Steak (1-3 possible). This is compared to two wheat for an average of 1 Porkchop (0-2 possible) and three wheat to produce one bread.
-Along with the 1-3 Steak, cows will drop 0-2 leather. Pigs, Wheat, and Melons are single-item producers.
-A cow farm can be as small as 1x1 while still producing hundreds of steak per hour, but a comparable wheat or melon farm must be many times that size.
The only real disadvantage to using Steak as your main food supply is that it takes a little more time to get a large farm started, but if you really want the best food then this shouldn't be a big issue.

Actually, I'm pretty sure that farmland hydration also ignores diagonals. My farms have one water in the middle and a big square of farmland around it.

I mean, it's simpler to create, easier to use and decode, and there are way more combinations than 20.
27 slots in a chest X 64 items in a slot = 1728 messages possible. And that's if you only use one type of item. I don't know how many items there are in Minecraft, but multiply that by 1728 and you have a combination for pretty much every message you could possibly want.
Not that it needs to get that complicated. For example, send a cobble and a coal to mean "Can you smelt some stone please?" Or send a Soul Sand to ask for more Netherwart.
All of this is less efficient than chat, but we were on the topic of using minecarts as communication devices anyway.
