The 4th dimension is a spatial dimension. Think of how we have length, width, and height--or in Minecraft, we have the X coordinate, Y coordinate, and Z coordinate. The 4th dimension would be another coordinate we could move through, usually designated as W. That coordinate is NOT time; time is a temporal dimension, separate from the spatial ones. You can have four spatial dimensions as well as a time dimension, for example, so moving through the W coordinate would not affect time in any way. It takes a lot to describe in more depth, and the best way to visualize it is by thinking of the difference between 2D and 3D. As for what they meant when they posted that tidbit in the snapshot page, the wiki says that it has to do with block metadata. Someone with a better understanding of how Minecraft works could probably tell you how that's similar to "removing the 4th dimension", though I'm guessing it's somewhat akin to taking away an unused, aforementioned W coordinate to free up memory.

I don't believe making it harder than necessary to control the game is an honest way of challenging the player.

A quick reset before handing it over removes any traces of the jailbreak. Apple would never be the wiser.
User agreements are not laws. You're not going to be sent to jail for modifying something you bought outright.

My thoughts on a possible solution for the multiplayer issue would be to only have new chunks load when the host player moves into them, and having guests teleport to their location when they do.

There are actually quite a few Bluetooth controllers available for iOS now. Most of them emulate keyboard strokes (via the built-in BT keyboard support), but either way Apple doesn't seem to object to implementing these as quite a few app store games have now.
The only problem I see with trying to implement the so called "iCade" controller method is that it has no analog input for camera control. Though some of the newer iOS compatible controllers do.
PS. Jailbreaking is not illegal. It just [theoretically] voids your warranty.

From what I gather it's not the buckets themselves that are a problem, but rather having lots of flowing liquids in the game world. If this is limited to milk then there shouldn't be any issue.
