I made a crow as the chicken and redid the sun and moon. I cant seem to test them out for some reason.. when i go into MC and try to change texture packs, the test one is colored grey :/ but heres the tests

OMG this is the best idea ever! I can't beleive no one has thought of it before haha I'll try to help out if you want some support, i've never actually trired re-texuring MC before though.

more aethsteically pleasing blocks and furniture, but out of the list id choose more mobs, more specifically friendly mobs.

What should i make when i turn it into bricks?

Definitely get more, i have over a full large chest full on my world and i still feel like i might need more for the ship i want to build.
