There are plenty of 'colourful' games. Scratch that, there are plenty of 'colourful' mainstream games, Halo, Gears of War, Uncharted, Assassin's Creed, etc.

I think zombies should be able to crawl and climb 2 block high walls, ladders and fences, make them more dangerous. I'll make a list of my ideal skills.
Zombie- See above.
Skeleton- Should be able to sprint and climb fences, trees and ladders in an attempt to snipe you from above. They should be the closest thing you have to an equal in the overworld.
Spider- Should be able to climb almost anything and crawl through some gaps.
Creeper- Should be the 'saboteur' of mobs, attempts to squeeze through holes and let other mobs inside.
Enderman- Should be able to reach 5 blocks up given their long arms.
Slime- should climb like a spider, and squeeze through fences and iron bars.
Zombie pigman- Should climb after you if you attack them and crawl, they can do almost anything you can.
Magma cube- Should act like a slime, except it's jumping allows it grab ledges.
Villager- Can do everything you can.
Golems- Will climb 3 block high walls.
Wolves- Should climb 2 block high walls.
Ocelot- same as wolf.

Graphics are the quality of the textures (Minecraft's graphics are 16x16, which is pretty bad).
Aesthetics are the look and feel of the game world (Minecraft uses pixel art to complement the blocky feel, so it has good aesthetics).

Actually, the Gears of War series has quite a few colourful areas; such as underground jungle and the Egyptian style fortress in 2 or the arabian style camps and the tropical island in 3, really, the first game is the only one that's just a 'gritty city'. I agree with your main point but you could have used a much better example than Gears.
However, aesthetic are opinion based, so to some a gritty city might look beautiful.
Apart from the first sentence, this is completely wrong. Aesthetics are used to complement the feel of the world. Gears of War and CoD are serious war-games, while Banjo-Kazooie is alight-hearted kids platformer, the colourful textures would look out of place and ugly in a game like Gears. The aesthetics of the games are meant to serve a different purpose, to say Gears looks worse than Banjo-Kazooie is almost like saying "Cowadoody iz waay betr den Miencratf", they serve a different purpose and can't be compared.
