I am self-hosting Minecraft 1.14.4 on an Ubuntu virtual machine and am finding it randomly crashing. I have the Minecraft service running through systemctl and checked journalctl for the logs below. At 10:59am, what is the encountered exception that took down the service? I had to SSH into the server and bring it back up with a `systemctl start minecraft` command.
Here is the crash report:

I can't tell what exactly the error is, but since it seems to be a Java error I think you should try using Java 8, you're using 11. No MC server and the game itself is made for Java 9 and above. Java 8 is the most stable for anything related to MC.
New crash report last night. I am unfamiliar with Watchdog. Why is my experience with vanilla Minecraft so unstable right now

That is a max tick exceeded error. Watchdog is crashing your server because your server is going beyond the usual max tick time (60 seconds). There is something lagging your vanilla server.
You need to analyze what is causing this lag.
When you start your server log in and perform these commands in order:
/debug start
Wait a few minutes for it to finish.
/debug stop
/debug report
It will generate a .zip file in the debug folder of your server folder. Open it and paste the debug files so we may analyze it.
I will downgrade and report back the results. Never knew this was a requirement.
EDIT: Downgrade finished. I will monitor for a few days. If Java 8 is recommended, I wish the documentation did not say to install the latest: https://minecraft.gamepedia.com/Tutorials/Setting_up_a_server
New crash report last night. I am unfamiliar with Watchdog. Why is my experience with vanilla Minecraft so unstable right now
