I'm sorry I'm posting into a new thread but I did not see this issue presented anywhere else.
I'm running a small server (2 to 4 players maximum) on a more than adequate hardware (i5 4 cores, 16GB ram, ssd storage), the server runs as a dedicated user on a otherwise unloaded 64 bit linux server. This is the java version:
openjdk version "1.8.0_201"
OpenJDK Runtime Environment (build 1.8.0_201-b09)
OpenJDK 64-Bit Server VM (build 25.201-b09, mixed mode)
What happens is that sometimes, when the server is being left idle for some days*, I login with the vanilla client (or one with Optifine as the only mod, I tried with both) and it stops responding. I login, I'm able to move around but not to interact with anything and then the client times out.
*(usually more than one week, but I can't measure it consistently)
At this point, the cpu on the java process goes to 100% and the server does not respond to minecraft commands even from the console (not even to "/say" or "/help" commands). I have to kill the process and restart, and here comes the bad part, if I do, the server says it's done initialising, but doesn't work anymore like before restart and I have to restore from backup, usually 24 or 48 hours in the past.
This is the only meaningful thing it logs:
[...]
[09:35:08] [Server thread/INFO]: Preparing spawn area: 100%
[09:35:08] [Server thread/INFO]: Time elapsed: 1361 ms
[09:35:08] [Server thread/INFO]: Done (7.575s)! For help, type "help"
Of course usually it's not a problem because if nobody plays, the world in the backup is the same, but what could happen if I had no backups drive me crazy. Any suggestion?

The log is just that above except for the login. No crash.
Next time it happens I'm going to try to set the debug on before logging in.
