So my 8 year old and I have been enjoying minecraft together so I've setup a couple vanilla servers on my home server for us to play on.
Long story short I want to explore some advanced server stuff. I started out with vanilla and am currently running two spigot servers which are much faster and are using less CPU/RAM but I don't think spigot has a lot of customization other than what's built in (maybe I'm wrong here). I'd just like to explore with some customization like lobbies, zones, etc.

Spigot is like bukkit and might not be huge by itself but when combined with plugins, it is fully customisable. It is crazy what you can do. You can set up factions, classes, advanced building and much more!
If you go to your spigot folder, you will find a folder called plugins. Here you can paste plugins to enhance your experience.
Type plugins bukkit on google to explore the community library and find what may suit you, your server and your family.

Skillapi-RPG Style Abilities and classes with cool animations and effects you can make yourself. (Requires a lot of time to get the hang of it)

Simply, read the page to learn how to use them, paste the downloaded files in the plugins folder, launch the server and check them out. SkillAPI is advanced, you might wanna try it out later.

With mods that allow you to travel to the moon or to warp to over 20 new dimensions, they are much more powerful than plugins but lack the simplicity. Cauldron is simply a combination of forge and spigot allowing you to run them side by side. Be careful, you might have to downgrade your world to use most mods. assuming you know about them since you did mention them, just install the mods and follow above. If you plan on using mods.

Thanks for all that info. Really helpful! I have been fishing for some good information on other forums like crazy and nobody has laid it out in this detail so thanks again. So in a nutshell customization is just running a server (spigot/bukkit/cauldron/etc.), loading up several addons, learning to use those addons/making sure they are compatible and don't conflict, log in as a player and customize?
