No need to obscure the IP in your port forwarding screen; it's a private, non-routable address that nobody can get to anyway. Just be sure the IP in that box matches the IP of the Minecraft server machine. In the server.config, leave server-ip blank. You only need to put something there if the box is multihomed. If you put your WAN IP (i.e. public IP, the one you see at www.whatismyip.com) in either the port forwarding or server-ip field then it will not work right.
