If I remember, those are the "100% free" servers which are likely home hosted servers by someone in their own home on an business line. You do know they are likely trolling the living heck out of you by playing on the same PC the server is running on? Hence how they have ::1 (127.0.0.1) as their IP. It is not possible to my knowledge to spoof the packet header IP to such for minecraft, but never saying isn't possible either.

I'd have to agree with this post. As for the hack, to my knowledge no such hack exists. Possibly he had access to console? Or even admin commands?

That is sorta the only way is to play on the same machine the server is on to have ::1 (Localhost). If you spoof the IP, you do harm to yourself honestly as the server will get the IP, but the send packs back to IP will be incorrect.
Say you spoof the header IP on an packet to 1.2.3.4. but your real IP is 123.45.6.7. The server gets this and thinks it is from 1.2.3.4. So it processes it as so and when it returns the new packet to 1.2.3.4, but you never get it so you never get the correct info back.
