You can't spawn it in any way other then MCedit as far as I know, because it's a tile entity, and therefore does not use a block/item ID like XP orbs.

Nope, because ender crystals are entities and therefore use entity ID's, not block/item ID's or damage values. It's like trying to spawn in the book on top of the enchanting table.

I'm sure you can just go to the end dimension on a server with bukkit, and then install and use worldedit to copy/paste it. I haven't tried so I don't know...
You have to make a Bukkit plugin which spawns it as an entity. Perhaps you can edit the source code of SpawnMob for CraftBukkit, it spawns monster entities.

I tried the copy/paste. Does not work.
Since there is a plugin that allows you to edit Monster Spawners, I imagine there's one for this too.

its easy, just set the damage value of a spawn egg to 200.
you get a Spwan Ender Crystal. using invedit to change it from an egg you gety ingame.
As far as that pig spawner method, maybe using worldedit once it's already placed could work.
