Like, if I want to host a Survival server on my computer to play with one friend online, can I use any open port available (ex. port 21 if neither of us are using FTP while playing), or do I have do port forward a random huge unreserved number like Minecraft's default one?

The registered ports are those from 1024 through 49151. A list of registered ports may be found on the IANA Website.[1] The dynamic or private ports are those from 49152 through 65535
best idea: 1024 or higher. I personally like 9999 because it's easy to remember.

Yeah, I read all of that before I made this thread and none of it answers my question. If I want to use 9999 I have to port forward, but if I re-purpose an open, unused port I don't.

Unless you are already doing some rather advanced tricks with NAT, Yes, you do need to forward whatever port you use. If you are behind NAT, you need to forward it to the computer. plain and simple. you seem to misunderstand what NAT is all about...
There is no such thing as an "open, unused port" behind NAT.. you seem to not understand the difference between incoming and outgoing connection initiations.

You can use any port number you want, but if you leave default that's one less thing to have to configure for the server and anyone connecting. Its generally not a good idea to ever assign different applications to the well known ports.
