I followed the instructions. Clicked redeem on Mojang, signed into Microsoft account, code typed in, all is good and it says that I can redeem minecraft, I click redeem, it says go to store, I go to store and click buy now, it has me sign in, I do, it asks me to select a payment option.
But free was supposed to be free.

If Minecraft: Windows 10 Edition beta is listed there, then you've successfully redeemed the game to that account. If it isn't, make sure you signed in with the account that you redeemed the code to. If it's not listed or you're not sure which account you redeemed the code to, you should contact Xbox support and they'll tell you which one it was redeemed to. Go here, select "Xbox on Windows 10" and "Purchase verification" under "Store" - you should be able to call/chat with their support.
If it's listed and you aren't able to install it from the Windows Store, you should try to sign out of the Store and back in. You can sign out of the store by pressing your profile icon at the top right, selecting your email and then selecting it again in the popup. There you can press "Sign out", once you've done that restart the Store and sign in with the same account as you did on account.xbox.com. There's a visual guide to doing so here.
Once you've signed back in, search for "minecraft windows 10 edition" and you should be able to get the game without the need for payment.

Now, I accidentally pressed "Free trial" and now it downloaded and only has an "open" button. Do I have the full game or..?

You can check if you've successfully redeemed the Minecraft: Windows 10 Edition gift code by signing in into https://account.xbox.com/en-US/PaymentAndBilling/PaymentOptions?managePi=0 and looking under "Transactions".
