I have been playing for 2 weeks and have been unlocking several trophies. It seemed fine as I had unlocked a trophy today ('Diamonds to you!') but I had crafted both a dispenser and an enchantment table and neither trophies that correspond to these actions have unlocked. I have not switched to creative mode or altered the host options and it is in it's original state from when I first started.
