First, I am not a gamer at all. I have few skills, and in 2019 tech has passed me by, so please don't assume that I am going to understand every word you say.
Have been playing Minecraft for less than a year now on PS3 and PS4. Just got Java edition for PC. Happy with the purchase, but not so happy with keyboard input. I've got the PS controller down pretty well (though my old brain is rather slow) and I'm a bit bummed about being tied to the laptop so closely.
So, in terms I can understand, can I rig a controller for the game? Plug and play would be nice, but from what I've dug up, that probably won't happen. So is it possible, easily? What platform is easiest to adapt? Is this a difficult project or simple? Right now I'm a little frustrated.
Also, can the video output be sent to a large flat screen TV?

Providing you have proper ports on both your PC and TV, yes, you can play on a big screen. HDMI port will work for sure. 99.9% of PCs and Flat TVs have at least one. And you'll need a proper HDMI cable cable.

As for controller, unfortunately I don't have any experience with it myself as I've been playing all of my life on PC with keyboard and mouse.
And I know it may be far more familiar for you to play with the controller, but I still suggest to try keyboard and mouse (not a laptop's touchpad, but a proper mouse), espacially in context of aiming, since 1.8+ mobs on Java and espacially Skeletons may frustrate you a lot. Maybe you'll like it better. Or maybe not ¯\_(ツ)_/¯.
I was kinda surprised to see a user not so young on this forum. A pleasantly surprised, that is.
Hope you'll enjoy Java Edition as much as PS one.

1. I suggest you give keyboard a better chance. It is by far a superior option. Once you are used to having every function at fingertips and precision of the mouse, it will be hard to go back to controller.
Gotta say though I use Logitech G910 mechanical. Cant stand typical 'chiclet' laptop keyboards.
However, just look for 'PS4 controller for PC' on Amazon if you really need it.
2. Pretty much every PC these days has an HDMI port. Just run an HDMI cable to the TV.
I don't know if PC Minecraft even supports controllers to be honest, but if it does it is super simple to set up (I'm also assuming that ps4 controllers work the same way as xbox ones but if they don't then sorry).
If it isn't a wired controller I don't know how to set those up either.
If you DO have a wired controller, or at least a spare USB cable to plug into the controller, plug your controller directly into any USB port on your computer. Usually with most games it automatically detects that your preferred input is a controller but like I said I don't even know if Minecraft supports controllers.
If this doesn't work you'll just have to do some deep Googling as someone else said.
