Piglins: they attack you/you lose popularity if you open chests that are generated as part of the village, use appliances, farm crops, shear sheep, collect eggs, kill animals, etc. Only village-generated ones though. To gain their trust so you can do this your popularity needs to be at least 10.
Piglin brutes: they act like above but also attack on sight unless you are wearing chainmail armour.
Also, bringing in or spawning new golems and taming/bringing in pets should increase popularity a bit, to make this easier.
Chainmail armour should be craftable in my opinion but you can also get it off zombies and skeletons - just switch to hard mode, see if any chainmails, switch to peaceful if not, repeat.
It would make far more sense if Piglins attacked players only if they had opened chests that were part of the Piglin homeland and not made by players.

And I believe there needs to be a better excuse for this than "it's the nether"
Obviously the nether is meant to be a lot harder than the overworld, but this doesn't mean neutral mobs should be triggered by something like opening your own chests which you placed. Disappointing to be honest and Mojang has forgotten what made their game great in the first place.
The old rules and staples made sense and fit in the realm of video game logic.

Nothing difficult about making chests in the over world where your nether portal is located. That's already a workaround so deterring players from opening their own chests in the nether is idiotic. Quite a defense for a mechanism that is basically pointless and does nothing but add fake difficulty to the game, and wasted time. Mojang has no argument on this one.

Gotta agree on that. My solution is to build a fort where the portal is and keep piglin out of it.

All this update has done is made the nether an even more shitty place to build bases in.
I'd rather build one in End with that in consideration.
Edit: there's not much point building a base anywhere unless you can make a small portion of said world your own. While you can still use hoppers to store items in nether, I doubt that will last very long because it is likely an oversight which Mojang would patch later on.
And what's the point in even building a base if you can't even access your own chest items in it without getting aggro? bases inside the nether are now worthless because of this. But at least we can build bases around the nether portal in the over world without that nonsense interfering.

You can certainly build bases with iron doors etc. Another thought is to have some nametagged piglin in a trading hall away from your storage area and out of sight from it.
