Give the player the ability to hook up multiple boats with leads to make a boat chain, similar to a train allowing the relocation of animals and villagers to be a lot easier. Perhaps introduce a new sort of boat with a different crafting recipe, either include a tripwire hook in the original crafting recipe or later combine a boat with a tripwire hook. Even add an animation to the boat when you connect up different boats, that would be cool. Also add a part into the behaviour where they give off a redstone signal when they're working in correlation to an observer or something similar, depending on the amount of boats hooked up the longer and/or stronger the redstone pulse is. Using that game mechanic would not only introduce a new way of creating a redstone clock and pulse lengthen-er that is perhaps easier to make than the current version as well as other uses but it would definitely create a much more time efficient way of transporting things.
