Currently there are no unique animals that spawn in dark forests. Unicorns are the perfect legendary animal to spawn in the fairytale-like dark forests, possibly atop a giant mushroom. Their appearance is similar to a white horse, but with a yellow mane, tail, and horn.
Health: Wild- 30 (❤️×15) Tamed- 40 (❤️×20) | Attack Strength: Easy - 4 (❤️×2), Normal - 8 (❤️×4), Hard - 12 (❤️×6) | Drops: 0-1 red mushroom | Experience: 0 | Neutral, singular spawn, not breedable
Unicorns spawn untamed, and become hostile if attacked by player. Unlike wolves, unicorns can be calmed by feeding them mushroom stew.
Feeding unicorns golden apples improves their "trust" in the player, increasing their likelihood of being tamed by the player. Treats all falls as a quarter of the actual distance, cannot fly. Not lead-able, will not follow player
Tamed and saddled unicorns are even faster than horses. They can run at 15.5125 blocks/second. All unicorns can jump high enough to clear up to five blocks
Taming depends on the unicorn's "temper". When a player first mounts the unicorn, the temper is 0 out of 100. The player is bucked off and the temper is increased +5. Temper can also be increased +5 by feeding it golden apples. The unicorn becomes tame if the temper exceeds 100
Similar to the dragon egg and end cities, unicorns only spawn after the player defeats the Ender Dragon. Another possibility is creating a "unicorn saddle," (small percentage of end city chests may contain the saddle), and unicorns can only be controlled with one of these saddles
I think that something very strong and rare like this would be a great addition to post-game defeat of the ender dragon, something else to search for and it would be worth it to find because of its speed and health and jumping abilities. It might be similar to a horse but that is pretty much the definition of a unicorn.
After defeating the Ender Dragon, I doubt many players would search for a unicorn other than as something to do. The "special saddle" you're suggesting also shouldn't come from the same place as an item that renders horses redundant (elytra).

I think it would be cool as a super rare horse variant, Not necessarily an improvement upon the horse but something cool to come across as you're adventuring.

So it's a clone of a horse, only objectively better in almost every aspect. This seems like a less X more Y idea. No Support
