Heres my idea for an update: Mood. Mood would not have ay UI on the screen, and would just work in the background without any display, as Minecraft already has too many UIs. instead, it is represented by a number that can be seen in the debug menu. Mood is a number between 1 and 10; the higher the number, the faster health regenerates when you have full hunger, and the slower you lose hunger, and vice versa.
Some things that make you lose Mood:
-Your dog/Horse/Other tamed animal dies
-You eat boring/raw food such as bread, raw meat, etc.
-You get hurt
-You die
-standing still
-mining for too long
-Hearing cave sounds
-being in complete darkness
-Thunderstorms
-being in the nether
Some things that make you gain Mood:
-Eating seasoned food*
-Mining rare blocks
-Finding rare items
-Killing hostile mobs
-Taming creatures
-pretty much anything fun lol
Ok but anyway, abut seasonings*... when you break tall grass, it usually drops wheat seeds, right? well, for every 1 in 50 tall grass you break, it will drop an herb seed. there will not be any specific herbs like parsley or basil, just an herb seed. you plant it in a flowerpot, and it takes 1 Minecraft day to grow. when left clicked, they will be picked. picking will drop one herb leaf. herb leaves can be put next to any salty food item in a crafting table, creating a "Seasoned [food name]" the texture of the seasoned food will be the same food, with black dots sprinkled throughout. An herb can only be picked 10 times before it turns into a dead bush. herbs cannot be replanted, so you will have to go out and break more grass. this will make them rare and therefore create a special value to the item.

Do you understand what erictom means by a bar? Just because there's no UI doesn't mean it doesn't fit. There's a saturation bar, even though it doesn't appear on the HUD. You suggested a changeable value with an upper and lower limit that the player can control and that directly affects the game. That makes it a bar, as opposed to some random value such as how Super Mario 64 stores coin values when exiting a level.
I agree that a mood bar would be a bad idea, though. Minecraft a sandbox game and not meant to be some hardcore survival game like 7 Days to Die or Green Hell. Furthermore, this mechanic would only screw over the player since your suggested "mood drops" are completely unavoidable and lack any sense. Cave sounds randomly play per player. What about if somebody disabled ambient sounds in their menu? Would they be immune to mood drops from cave sounds or would their mood randomly appear to drop? No player can completely avoid thunderstorms without console commands, and it isn't very fair to punish the player with slower health regen and faster hunger drain just from sounds and weather. The same goes for the Nether. Ansd what do you mean by "anything fun?" Fun varies from person to person. I like redstone though I know people that avoid any automation because it stresses them out. A lot of people love flying using elytron, but they always make me anxious because I'd rather heave the extra protection and I'd rather not smacking my head against a wall and dying. The basic mechanic would be pointless, too, since health potions exist and the player heals through eating in and of itself.
Gameplay > realism, but there's a fine line between balance and annoyance. No support.
