HOW THE TEMP. CHANGES
So, this would be an addition that would give each block a heat level. This would effect the speed at which plants grow. Heat would be affected by torches, fire, lava, snow (layer), snow (block), weather, ice, water, and whether it's day or night. The heat level would be from 1-20. Anything higher then 20 and anything lower then 1 would effect nothing. Torches would raise the blocks around it's temp. by 1. Fire would raise the blocks around it's temp. by 2. Lava would raise the blocks around it by 2 and the blocks around those blocks by 1. A snow layer would lower the temp. around it by 1. A snow block and ice would raise the temp. around it by 2. If it's raining it would lower all the blocks temp. that the rain was touching by 1. If it's snowing it will lower all the blocks temp. that the snow is touching by 2. Water would lower the temp. around it by 1. at day the temp. will be raised by one, and at night it will be lowered by one. BIOMES: Basically, if you don't like the space having all those blocks, and are willing to have multiple farms, you can use biomes instead. Basically, plants that grow better in 15+ will grow better in "hot" biomes (i.e. desert) if they are cold biomes (i.e. Tundra) they will have to be 5- to get the growth bonus.
PLANTS AND HOW THEY ARE AFFECTED BY TEMP.
Plants would gain a 30% growth rate increase when it is in optimal temp. Wheat: 12-16. Carrots: 10-20. Potatoes: 6-10. Melons: 15-20. Pumpkins: 9-18. Saplings would turn into dead bushes at 19-20. Sugar Cane: 17-20. Cocoa: 17-18. Netherwart: 20. chorus: 1. Oak trees: 9-14. Birch: 8-10. Jungle: 16-18. Dark oak: 8-11. Acacia: 11-14.
I'm having trouble with the trees temp, if anyone has any suggestions for changes or a temp. for pine, please say so.
Other Uses For Temp
When water is in temp. 3 or lower, it freezes. When ice is in temp. 8 or higher, it melts.
The temp. of the block your currently in would be shown in the debug menu, like the light level.
I'm not that big of a fan of this, at least the part about making individual blocks affect heat. I do like the temperature affecting plant growth and changing based on time of day/weather though. I would rather this be grouped into the existing temperature system that is tied to biome placement, so each biome has a specific value and it can be modified by a certain amount based on the time of day.

In the middle of the day the temperature value for biomes could go up 5 points, and at night it could go down 5 points. So during midday the Ice Plains would have a value of 10, making it easier to grow plants, but the Desert would be at 20 and it would be harder to grow plants. At night they would go down 5 from the base value so Ice Plains would be at 0 and make plants take longer to grow, while the Desert would be at 10 and things would grow more easily (as long as it was properly lit).
Working the heat supplying blocks into it would be really cool too, I am just nervous about making each individual block carry a heat value, rather than using entire biomes because of the additional space it would take up.

Why not just have growth rates be per biome, with some being better for some crops than others? Having a temperature system seems oddly complicated, and Minecraft really isn't the kind of game that contains such deep mechanics.
What I meant to say was, if this could be applied to biomes, why not have plants in deserts turn into dead bushes? It would need to get players to get a "cold" source block to efficiently plant in the desert or go to another biome.

I actually planned to incorporate biomes into this, it's just taken so long and I've tried this suggestion so many times that after seeing how many individual biomes there are, I wanted to just post and add this later. I will add later.

It's an alright idea, and though it seems like a bit to remember, it does add good farming dynamics without really breaking anything.

Edited, made it so crops grown in optimal temp. also give one more hunger bar for the ones you eat.
Since food is pretty much infinite in this game, that's a bit overpowered and not really necessary. To be more constructive though, perhaps proper temperature can give a chance of spawning a "special" version of a crop?
Seems balanced, and since players ignore the changes, it's a good addition to Minecraft.

This is a good idea, but I think it needs to be expanded more, with biomes and shade taken into consideration. Also, possibly new blocks that take advantage of these new mechanics (like a thermometer or heat-sensor).

This is a really good idea, it'll definitely fly.
Maybe you could also add a hunger replenishment factor, so for example:
You grow some melons...not all of them will replenish the same amount of hunger
since some may be bigger...or smaller?
